Lately I have been thinking about this summer and trips we will be going on. One that is particularly on my mind is one we endure very year... Tennessee! It may sound strange to go to Tennessee in the middle of summer, but we have a really fun family reunion there, getting a chance to see a whole bunch of amazing family members we hardly ever get to see. Telling stories, enjoying each others company, and eating plenty of food! You gotta love it!
One restaurant we always go to (and I mean multiple times during our stay. We are obsessed because they aren't in our neck of the woods) is The Cracker Barrel! Yumm... Southern comfort food. The best (besides homemade)!
Sooo... based off of their cucumber salad, which I love to order when we go, I made my own version. It was great! All you do is combine cucumber, tomato, onion, a sprinkle of feta cheese, and a splash of balsamic vinegar. Highly recommended!
