So sorry I didn't post until so late... Today has been pretty hectic. Running from place to place... Lots of driving in lots of traffic... yuck! Constantly thinking of all the things that need to get done in the little/no time left in the day. I decided that on days like this it is good to be reminded to stop and smell the roses. This past year, in an effort to eat healthier, I have been obsessed with making mashups! What is a mashup? Well, like any professional chef, I began by searching the fridge and pantry to see what I had to work with... Random cans of beans, a bag of quinoa and an assortment of veggies... So I began mixing together whatever I could find that I thought may taste good combined... The mashup was born!
No two mashups are alike! I love that. Totally customizable based on what ingredients you have or what your in the mood for!

{ Redeemed Girl }
Hey everyone! Happy Wednesday! Yesterday, I was going through Instagram and ran across one thing that led to another that led to another... you know how that always seems to happen. Eventually I found this really neat company called Redeemed Girl Ministries.
Marian Jordan Ellis is the author, speaker and founder of Redeemed Girl Ministries. She is a wonderful lady who has made these great podcasts about God, the Bible, questions you may have, etc. She also has these beautifully designed scripture memory cards available for sale. She does a year long study of memorizing scripture that you can follow along with by using the cards and/or watching the podcasts online. I started listening to some of the podcasts on my phone while I was on a walk yesterday and I am really enjoying them! Her videos are so relatable and inspiring! The perfect call to action for me to really start learning the Word and keeping it in my heart. I highly recommend checking it out and following along this year, as we memorize scripture so that we can truly have God's Word in our hearts.

{ Vibrant Workout Outfit of The Day }
My favorite way to exercise? WALKING! Every night and weekend morning (when I don't have to get up to go to school) I take Cooper on a long walk around town... A great way to get me out of bed (and do something productive). Cooper demands it and so does my Fitbit! (I will be talking more about the Fitbit on Friday so check back!)
On another note, I wanted to tell you about these two workout outfits that I got for Christmas. The raspberry long sleeve is perfect for night walks or cooler mornings... Green berry short sleeve tee for afternoon! Both are lightweight and easy to wear... and they keep you cool! Nobody likes to be all sweaty! Best of all, they are from Target! Who doesn't love Target?!

{ Cinnamon Apple Brown Rice Recipe }
Hey everyone! I wanted to share this easy, healthy and yummy breakfast idea with you. Fast and simple to make (and store) it will be ready whenever you are! All you need is:
One Serving:
1 cup cooked brown rice
1/4 cup original unsweetened almond milk
1/2 an apple; cubed
1/8 tsp pumpkin pie spice
1/4 tsp cinnamon
handful of almonds; chopped
Combine. Cook over medium heat until most of the almond milk is absorbed. (Feel free to add more or less almond milk depending on how thick you like it)... Serve in your favorite cup or bowl... and enjoy!
I love that it is healthy yet super tasty, and keeps you full all morning! Make a big batch and store it in the fridge for a fast breakfast or even dessert, you can simply heat up.
